I made this the other day and loved it. It was quick super easy and pretty clean!
1 cup Cooked brown rice
Half of a whole chicken (shredded) (I use a rotisserie chicken or I keep shredded chicken breast prepped most of the time)
1 cup mixed frozen veggies
Handful of broccoli slaw
3 whole eggs
Reduced sodium Soy Sauce
1 tbsp Chinese Spices
Scramble and cook eggs. Set aside.
Saute Olive oil, garlic, Chinese spices, & frozen veggies
Add Rice & chicken. Stir
Add Soy Sauce to taste and you may need to add a bit more olive oil
Stir in scrambled eggs and broccoli slaw
Optional: I like to add this Japanese spicy chili sauce called Siracha you can get at most stores. Red bottle green squeeze top.
