Heat a little coconut oil in a pan.
Add EXTRA LEAN ground turkey to hot pan.
Add spices. I used: Paprika, Cumin, Chili Powder, and my garlic & onion paste (you can just add chopped or grated onions and garlic)
Stir to mix spices evenly, and break up the turkey to cook faster.
I use Uncle Ben’s instant brown rice. Popped that in the microwave.
Cut and Steamed asparagus (I steam by boiling water in a shallow pan with a wire rack above it and place veggies on top, cover.) takes about 5 minutes depending how soft you like.
Chop tomatoes, green onion, and cilantro. Put in a bowl mix with lemon juice (I usually make a big batch of this, lasts about 2 days in fridge)
Add half a can of (no salt added) plain tomatoe sauce to cooked turkey. Turn heat to low.
Plate rice, steamed asparagus, turkey, then pico de gallo mix. Top with avocado. Bam!
