I was still on a pizza kick and had mushrooms I wanted to use up before they went bad.
Made mini pizzas out of these Gluten Free English Muffins I love. Sauce is just canned tomato sauce + spices. Topped with veggies I had and Almond Milk imitation mozzarella cheese. Scrambled about 3-4 eggs with chopped green chile (I <3 NM) but you can use jalapenos if you don’t have green chile. Just spices up your eggs if you’re getting bored or plain eggs. Garnished with sliced mini bell peppers.
My mom and sister wanted burgers, and since I’m always trying to get them to eat healthier I told them I’d make homemade (healthy burgers) . Patties: extra lean try to get 98% fat free or ground turkey if you can (they wanted beef so I compromised) + your favorite spices. Found these gluten free buns or you can use lettuce for a low carb version. I toasted the buns and cut all the toppings so everyone could build their own burger. No cheese for me and topped with lettuce, tomato, bell pepper, green chile, & mustard. Took a couple bites with the full bun but felt too big and like too much bread so I took the top bun off and finished with a fork and knife. Next time I’ll make sweet potato fries w/ this if I have time.
Had tons of left over lean ground beef so I just cooked it all with some random spices and stored in fridge.
Dinner was your standard body-building diet meal. LOL This is what most fitness competitors are eating meal after meal several times a day for weeks. I’ve been there, done that. It works. (meal-prepping the same meal to eat several times a day) But I just can’t do that anymore. With that being said though, this IS one of my favorite meals! I honestly enjoy it. Grilled chicken with pepper, paprika and garlic powder. Steamed Broccoli and Baked potato. Not pictured: A glass of Red and Green Juice (find recipes in my blog archives). I try to have my juices earlier in the day (not that it matters when) but it was a busy day and didn’t get to juice until I was making dinner.
As you can see, MOST days I don’t get more than 3 meals in a day, like a NORMAL person. lol everyone thinks that you HAVE to eat 6 meals a day and get a million grams of protein to see results. The truth is that sometimes that’s impossible! So I try not to sweat it. I used to meticulously portion my foods, count my macros, and force myself to eat tons of protein. (and again, that DOES work!) But these days I’m way more relaxed. I try to live a more balanced life instead of always being in either “diet/prep” mode or in “binge as much as possible until it’s time to prep again” -mode.
Overall I felt good about my diet today, it was a busy day and I still didn’t technically cheat, I didn’t go to bed hungry. I ate when I was hungry I stopped when I wasn’t, I ate carbs and all those things make me happy.
